Spaghetti Sunday

Matthew and I are headed to Chicago at the end of this week, which should explain any absences in my blogging.

It doesn't however explain why I purchased to fresh bunches of kale this weekend.

I think I have a problem.

Regardless, it needed to be used.


I mean...isn't it pretty?

Can you call kale pretty?

Spaghetti with Braised Kale

1/2 bunch Kale
1 tbsp olive oil
1 clove garlic, minced
1 tsp lemon juice
1 tbsp reserved pasta water
Salt
Pepper

Whole Wheat Spaghetti

1) Heat olive oil in pan until glistening

2) Add garlic

3) Add kale and cook until dark green

4) Toss with cooked pasta, water, lemon juice, salt and pepper

5) Easy



Now, I just have to use the rest of the kale before Thursday at 4:15 AM (that's when we're leaving).

I don't think that will be a problem.

  1. I've been wanting to buy some kale to roast it . . kind of like potato chips only kale chips. I think I saw that on the food network. Love you blog! Have fun in Chicago. . .are you going to ACDA?

  2. I will NEVER understand your fascination with kale. GROSS! Just looking at it makes me think of spinach (the other green thing I can't stand). lol... Why can't you top things with asparagus or peas?

    PS: Did you know they make pasta out of flour made from artichokes? It is the yummiest pasta I have ever had. Promise.

  3. We are headed to ACDA with The Singers! I loooooove kale chips, but Matt thinks they taste like dried leaves, so we don't have them too often.

  4. They do taste like dried leaves...but it a weird way good. I have mixed emotions towards Kale Chips.
