Wifely Wednesday

Two years ago, one year ago, one month ago, had someone told me I would be standing in my tiny kitchen cooking meatloaf, yes MEATLOAF for my husband I would have laughed in his/her/their faces.  

Nevertheless, maybe it's nostalgia, or a little extra feeling of housewifeyness (my blog, my made-up words),  I was in my kitchen this evening cooking MEATLOAF (it deserves all caps) for my husband.  

To reduce the fat content, and because we rarely eat beef, I went the turkey meatloaf route.

Turkey Meatloaf

1.3 lbs ground turkey
1/2 cup finely diced carrots
1/4 cup ketchup
1 egg
1 tsp marjoram (I still don't know what the heck it is)
1 tsp parsley
Salt
Freshly ground black pepper


Now, most meatloaf recipes call for onion, but around these parts we/I don't use onion.  Why?  I've never liked onion, probably  because it reminds me of 7th grade body odor, a smell I'm all too familiar with these days.  I dumped all of the ingredients in a bowl of wiggly goodness.  It looked like this.


After thoroughly washing my hands to the tune of the ABC's,  I dug in and mixed it all up.  I formed a loaf and dumped it in an un-greased loaf pan.  

I baked it at 350, for about an hour.  It looked like this:


DISCLAIMER: the carrots and ketchup give it a orange-y tint, but I assure you it was cooked through!  No food poisoning here!

Matthew had his with some green beans and left over cornbread (in its abundance), and I had mine with a HoneyCrisp apple (mmmm).  After many unsuccessful tries I concluded it is impossible to take an appetizing picture of meatloaf.  So, I give you a picture of Matthew's dinner plate with the assurance that it tasted much better than it looked.

  1. Turkey MEATLOAF????? Yum!!!! Jake and I like to substitute turkey for beef all the time when we cook. It's a great way to have lean meat (and nobody really notices the difference). It's like when I used antelope instead of beef for Hamburger Helper once... Nobody knew the difference. lol
